INGREDIENTS

– Peerkai thol (ridge gourd skin) – Urad dal – Channa dal – Garlic cloves – Small onions (sambar onions) – Coconut pieces – Tamarind – Dried red chillies

STEP 1 - ROASTING

Roast urad & channa dal until light golden, then add garlic, onions, coconut & tamarind

STEP 2 - COOKING

Add chopped ridge gourd skin. Saute until soft. Don't overcook—it should blend with spices, not turn mushy

STEP 3 - GRINDING & TEXTURE

Cool slightly. Blend to 90% smooth—keep it thick, not too fine. Add salt while grinding
