Siru keerai has 3x more iron than spinach.

The trick? Tamarind in the recipe helps your body actually absorb it. Most people skip this part.

6 ingredients only.

No fancy spices. No dal. No curry leaves.  Keerai + onion + garl ic + chilli  + tamarind + oil.

Pressure cooker: 3 whistles 

Then mash with wooden mathu until soft.

Now comes the magic.

Golden garlic in clay pot.  Sizzle.   The aroma hits. This is where it all comes together.
