Method
- Clean and wash the fish pieces thoroughly.
- Add red chilli powder, turmeric, salt, coriander powder and rice flour.
- Add egg (optional) and turmeric extracted water to make a smooth masala.
- Coat the fish pieces evenly and rest for 20 minutes.
- Heat oil in a pan and add curry leaves for aroma.
- Place the fish pieces and shallow fry on medium heat.
- Flip and cook until golden and crispy on both sides.
- Remove from oil and serve hot.
Notes
- Tamarind is optional — gives a mild tangy flavour if added during marination.
- Replace egg with curd for an egg-free version.
- Add 1 tsp ginger garlic paste for extra flavour.
- Vanjaram / Mackerel / Sardine works best for this recipe.
- Fry on medium heat to get crispy texture without burning.
