Chicken Pepper Soup Recipe | Easy Chicken Milagu Soup

Whenever I have a sore throat or feel a little feverish, this Healthy Chicken Pepper Soup is one of the first recipes I make at home. It’s hot, peppery, comforting, and comes together in just about 20 minutes in a pressure cooker. I also make it often during the rainy and winter seasons when everyone wants something warm and soothing.

Chicken Milagu Soup is a simple South Indian pepper chicken soup made with freshly crushed black pepper, coriander seeds, cumin, ginger, and garlic instead of ready-made masala powder. Using a mortar and pestle to crush the spices gives the soup a fresh aroma and a bold peppery flavor that makes it stand out from regular chicken soups.

We usually enjoy it as a hot soup, but it also tastes delicious with steamed white rice or soft idlis. In many South Indian homes, this comforting soup is also called Chicken Rasam, though every family has its own variation depending on the ingredients and consistency.

  • 2 tablespoons gingelly (sesame) oil
  • 1 bay leaf
  • 2 cloves
  • 2 green cardamom pods
  • 1 small cinnamon stick
  • 1 medium onion, finely chopped
  • 1 sprig curry leaves
  • 1 medium ripe tomato, chopped
  • ½ teaspoon turmeric powder
  • 500 g chicken (bone-in or curry-cut pieces)
  • 500 ml (2 cups) water
  • A handful of fresh mint leaves
  • Salt, to taste
  • Fresh coriander leaves, chopped (for garnish)

How to Make Chicken Milagu Soup (Step-by-Step)

Step 1: Prepare the Fresh Spice Powder

Coarsely crush the coriander seeds, black peppercorns, and cumin seeds using a mortar and pestle. Avoid grinding them into a fine powder, as a coarse texture gives the soup a stronger aroma and better flavor.

Step 2: Crush the Ginger and Garlic

Add the ginger and garlic cloves with their skin to a mortar and pestle. Crush them together until coarse. I prefer using garlic with the skin on because it adds more aroma and flavor to the soup while it cooks.

Step 3: Prepare the Flavor Base

Heat gingelly oil in a pressure cooker over medium heat. Add the bay leaf, cloves, cardamom, and cinnamon. Once they become fragrant, add the chopped onion and curry leaves. Sauté until the onions turn soft and translucent.

Method
 

  1. Coarsely crush the coriander seeds, black peppercorns, and cumin seeds using a mortar and pestle. Keep the fresh spice powder aside.
  2. Add the ginger and garlic cloves with the skin to a mortar and pestle. Crush them coarsely and set aside.
  3. Heat gingelly oil in a pressure cooker. Add the bay leaf, cloves, cardamom, and cinnamon. Sauté for a few seconds until aromatic.
  4. Add the chopped onion and curry leaves. Cook until the onions become soft and translucent.
  5. Stir in the freshly crushed ginger and garlic. Sauté until the raw smell disappears, then add the chopped tomato and turmeric powder. Cook until the tomatoes soften.
  6. Add the chicken pieces and freshly crushed spice powder. Mix well to coat the chicken with the spices.
  7. Pour in the water, add the mint leaves and salt, and bring the soup to a gentle boil.
  8. Close the pressure cooker and cook for 2 whistles. Let the pressure release naturally.
  9. Garnish with freshly chopped coriander leaves and serve hot.
